Ginger Carrot Soup (A WW Zero Point Food!)

A delicious gently ginger-spiced carrot soup for when you want to lighten up a bit. A vegan dish so satisfying you won't miss the meat!

Ingredients
  

  • 14.5 ounce can of low-sodium vegetable stock
  • 1 cup of hot water
  • 1/4 sweet Vidalia onion
  • Three cups of carrots peeled and cut into small sections
  • 1 heaping teaspoon of ginger
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of smoked paprika
  • a pinch of cayenne pepper
  • a pinch of black pepper

Method
 

  1. Assemble your Pampered Chef Cooking Blender, see the "notes" section of this recipe for the adaptation.
  2. Add all the ingredients to the PC cooking blender. Close the lid and ensure the lid cap is secure.
  3. Select the "soup" button and let the blender go to work for you!

Notes

If you do NOT have a PC blender:
  1. Dice the onion and be sure your carrots are sliced thinly for a quick cooking time.
  2. Simmer on top of the stove for about 30 minutes.
  3. After carrots are soft to fork-tender, pour the ingredients into a blender or food processor and puree until smooth. This may take several small batches, depending on capacity. Please be careful when working with these hot liquids.
