Soul-Satisfying Ginger Carrot Soup, Healthy and Weight Watchers Friendly

While I blog often about tasty sweets, breads, and treats, those who know me best realize that I enjoy those foods. However, I primarily stick with a WW (formerly Weight Watchers) eating plan. And when I have overindulged in heavier foods and need to get back on track, this cozy Carrot Ginger Soup is one of my go-to dishes to get myself back on track!

I started on WW in 2019 and lost about seventy pounds, maintaining a very healthy weight for over a year. Over the past months (thanks pandemic) a few pounds have crept back on, but I am on my way back to basics. It’s not that I care about my weight so much. But having had a mini-stroke in 2013 at a very young age should have been a wake-up call.  It took me a few years, but I finally did get serious about wellness. I’m determined to take the pandemic fluff back off. 

So, I recently revisited some of my recipe notes from that period of very successful weight loss and found this old gem on a notepad. I fell back in love with this soup all over again. In fact, I like it so much that I did not want to keep it to myself. 

To make this recipe most easily, use a “cooking blender,” if you have one. I have a Pampered Chef model. That said, Ninja and Instant Pot also make similar units–just learn their load capacity from your user manual and adjust accordingly. The Pampered Chef model holds six cups of hot foods (to allow for expansion) and seven cups of cold ingredients.

Ginger Carrot Soup

I made up this recipe when a neighbor who had a bumper crop of carrots very generously shared her bounty with me. It was a warm day and I didn’t care to use the stove. As I had recently invested in the Pampered Chef blender, it seemed like a good chance to put it to work.

Since carrots are super-affordable and easily available year-round, I’m sure this will quickly become a favorite for you, too! Enjoy!

Ginger Carrot Soup (A WW Zero Point Food!)

Yield: 6 cups
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

A delicious gently ginger-spiced carrot soup for when you want to lighten up a bit. A vegan dish so satisfying you won't miss the meat!

Ingredients

  • 14.5 ounce can of low-sodium vegetable stock
  • 1 cup of hot water
  • 1/4 sweet Vidalia onion
  • Three cups of carrots, peeled and cut into small sections
  • 1 heaping teaspoon of ginger
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of smoked paprika
  • a pinch of cayenne pepper
  • a pinch of black pepper

Instructions

  1. Assemble your Pampered Chef Cooking Blender, see the "notes" section of this recipe for the adaptation.
  2. Add all the ingredients to the PC cooking blender. Close the lid and ensure the lid cap is secure.
  3. Select the "soup" button and let the blender go to work for you!

Notes

If you do NOT have a PC blender:

  1. Dice the onion and be sure your carrots are sliced thinly for a quick cooking time.
  2. Simmer on top of the stove for about 30 minutes.
  3. After carrots are soft to fork-tender, pour the ingredients into a blender or food processor and puree until smooth. This may take several small batches, depending on capacity. Please be careful when working with these hot liquids.

See how easy this is to make? Once you try it, you will want to make it over and over again. Feel free to bump up the ginger if you want a little extra spice or omit the cayenne pepper if you avoid heat.
